Pat steaks dry with paper towels. Mix sea salt and pepper. Immediately before cooking, season both sides of steaks with salt and pepper mixture.

Heat Vintage Market & Co Garlic Avocado Oil

over medium-high heat in a cast iron pan until hot. Add steaks and sear first side for 3 minutes then flip and cook another 2 minutes. Finally, cook all edges using tongs, approximately 1 minute total.

Using an instant-read thermometer, check meat temperature; remove from pan when 10 degrees under desired temperature.

Reduce heat to medium, add butter and garlic. As melting, spoon over steak. Remove steak when 10 degrees under desired temperature.

 

Medium Rare: 130 degrees F, remove at 120

Medium: 140 degrees F, remove at 130

Medium Well: 150 degrees F, remove at 140

Well Done: 160 degrees F, remove at 150
